Vinification
The Ripasso technique, always used in our cellar, consists of re-fermenting the Valpolicella with the skins from the freshly made Amarone. In contact with the skins from grapes dried for about 3 months, still rich in sugars and aromas, the wine gains greater structure and complexity.
